Tomato and cheese crostini

Ingredients:

1 small container (about 20-30 tomatoes) cherry tomatoes

1 bunch, leaves torn basil

see directions olive oil

to taste salt

to taste pepper

1 ball mozzarella

2 cloves garlic

to drizzle at the end balsamic vinegar

1, sliced on a bias baguette

Directions:

Preheat oven to 350 F

Add tomatoes and torn basil to oven safe dish and drizzle generously with olive oil. Sprinkle on salt and pepper and toss. Make sure basil is well oiled and isn't sitting on top of the tomatoes to prevent burning.

Bake for around 30-40 minutes until tomatoes are softened and squishable.

Meanwhile, fry sliced baguette over medium heat in generous amounts of olive oil until one side is golden brown.

Flip the baguette slices, and once second side is almost golden top with sliced mozzarella. Let mozzarella melt slightly.

Remove baguette and cheese from the pan and top with roasted tomatoes. Drizzle with good quality balsamic (or balsamic reduction/glaze), and enjoy!
