Ribs - Chef John Winter Ribs

Ingredients:

2 racks back ribs

2 tbsp kosher salt

2 tbsp white sugar

0.5 tsp cayenne pepper

1.5 cups bbq sauce

Directions:

combine salt sugar cayenne in a bowl

pierce the membrane on the ribs

cover the top (meaty) side with the powder, then cover the bottom (bone side)

wrap tightly in tinfoil, bone side up, like boats

put in 250 degree oven for 2 hours

take out and rest 10 mins

pour off the liquid

add sauce to both sides of the ribs

crank the oven to 350 degrees

but them back in meat side up for 10 mins (4 times total)

pop them out, sauce the meat side, put them back in for 10 mins
