Potato pancakes

Ingredients:

6 small or 4 medium yukon gold potatoes

1 small or 1/2 medium yellow onion

1 egg

2 tbsp potato starch

to tast pepper and salt

Directions:

Grate the potatoes, mostly on the fine grater (this can also be done in the blender or food processor), but coarse grate one for texture.

Place grated potato in cheesecloth over bowl and squeeze, let drain

Pour off collected liquid from potatoes, saving starch at the bottom of the bowl. Add starch back to potatoes.

Fine grate the onion and add it to the potatoes

Beat in egg then add additional potato starch and salt and pepper.

Fry over medium high heat in olive or avocado oil

Serve with apple sauce and sour cream
