Pizza Dough - Genarro

Ingredients:

163g flour

1.1tsp yeast

250ml water (luke warm)

1tsp salt

Directions:

Combine salt and flour in 1 bowl and mix

Mix yeast with water until dissolved

Slowly add liquid to flour+salt and mix into a rough ball

put on flour dusted surface and cover with a tea towel for 5 mins

knead the dough for 10 mins - I usually add lots more flour during this process

discard aprx 1/4 of the dough (still optimizing..)

form dough in a ball, cover with a damp tea towel, place somewhere warm, rise for 2 hours (double in size)

turn on the oven with pizza stone/backing steel inside at 450+ for 60 mins

dust the pizza baking sheet with semolina

stretch the dough into a pizza shape on a flour dusted surface then place into pizza baking sheet

add sauce and toppings

bake for 7-12 mins with baking pan on top of stone/steel (we're going with 12 on our 2nd time making this)

maybe add fresh cheese and basil later in the cooking
