Nanna's chicken liver pate

Ingredients:

1 lb chicken liver

3 tbsp finely chopped onion or shallot

1, peeled and finely chopped granny smith apple

1/2 lb, room temperature butter

1/4 tsp nutmeg

dash cayenne

dash cloves

dash dry mustard

5 tbsp brandy or cognac

to taste pepper

Directions:

Trim fat from livers. Put into small saucepan and cover with water. Boil and reduce to simmer for 20 minutes. Cool in liquid then drain.

Saute onion and apple in 1 tbsp butter for 5 mins at medium heat

In a food processor or blender combine all ingredients and process until smooth.

Put into bowl or terrine and cover surface with additional ground pepper or chopped parsley.

Note! This freezes very well in the bowl. To thaw, place in fridge 24 hours before serving time. Let get to just below room temperature before serving with baguette or crackers.
