Ingredients:
1/2 lb guanciale, skin removed and sliced in short but fat matchsticks
1/2 onion, finely chopped
1 large tin san marzano tomatoes, peeled
3/4 box bucatini
2 cups parmigiano reggiano, grated
to taste pepper
1 tsp or to taste red chilli flakes
Directions:
Boil a large pot of water on the stove (add salt after water boils and bring to a boil again).
Meanwhile, heat pan just below high heat. Add olive oil and guanciale. When guanciale is just about golden brown, reduce heat to medium low and add onions. Saute until onions are softened.
Add tomatoes, pepper, and red chilli flakes to pan and bring to a bubble.
Add bucatini to salted water and boil to al dente.
Add cooked bucatini to pan with sauce and add cheese, toss to combine and serve.
